I recently purchased Oblivion and i am wondering if there are any ''must have'' mods to get before i start playing. Mostly looking for aesthetic changes/add ons as i want to play oblivion as it is first.

I made one mod my self, and considering it a Must Have.
Here is the change log:

This mod makes several game values tweaks to increase realism, usefulness and improvements of some options.
Changes:
Arrow Speed 5000 From 1500
Arrow Gravity 0.5000 From 0.3000
Arrow Max Distance 2500 From 2000
Attack Disarm Chance 20% From 5%.
Block Disarm Chance 10% From 5%.
Pull Out Used Arrows Chance 100% From 50%
Fall Damage Multiplier 150.0000 From 80.0000
Knockdown Chance 25% From 0,3%.
Spell Recharge Cost 50% From 100%.
Skills Training From Trainers Per Level 10 From 5
Marksman Paralyze Chance 10% From 5%.
Marksman Knockdown Chance 20% From 5%.
Maximum Block Damage Absorb 100% From 75%.
Maximum Armor Rating 95% From 85%
Player Death Cam 100sec From 4sec.
Power Attacks:
-Static x4 From x3
-Forward x5 From x2.5
-Back x4 From x2.5
-Side x3 From x2.5
-Basic x2.5
Combat Detect Chance 25% From 50%.
Crime Alarm Distance 1000 From 4000
Critical Hits:

yeah i got goty edition so i have shivering isles and knights of the nine. I am only looking for aesthetic changes though, such as darker nights... More (amount) passive creatures and better weather/textures... Stuff that improves atmosphere and immersion.

Without this mod there isn't going to be much of an Archer or Assassin gameplay. (this mod will make it more playable, cause in vanilla Oblivion you can't even properly assasinate common bandit)
Well i dont know maybe you prefer playing as warrior.

Kafeis Better Amulet Replacer - more realistic textures
Kafeis Better Rings Replacer - more realistic textures
Visually Enchanted Weapons - enchanted weapons have visual effects
Imperial Watch Armor Playable - Elite Guards armor is playable

Here's a list of mods I would recommend. I got Oblivion within a week of its release, and I have played Morrowind before, so I should know my stuff :D.

For reliable sites:

Mods:

No Quest Items - If you want to be able to drop or equip quest items.

All SI and OB Armor Playable - Makes all clothing and armor lootable, i.e. Golden Saint Armor from Golden Saints.

Body Retex mods - If you want better body meshes, these are the kinds of mods you'd like. Just search and find your favorite.

Oscuro's Oblivion Overhaul - A must have for all Oblivion players. Good with Martigen's Monster Mod as well.

Modular Oblivion Enhanced - One of THE BEST mods I've seen (though there's conflict problems). Adds scythes, lichcraft, lycantrophy, vampire clans, different styles of weather, and more. It also brings two Morrowind items back: Keening and something else (I forgot.).

Martigen's Monster Mod - "No two monsters shall ever be the same" is the motto of this mod, and it sure lives up to it. There are monster-against-monster wars, tons of new enemies, and also more crafts. Blood golems, giants, frost minoutars, and Undead Legion Soldiers are some of the monsters that come with this pack.

Toaster Says Share Companion Mod - A mod for people who want to recruit a party of adventurers to cover you.

Harvest Mod - A must have for more realistic games. When you harvest a plant, the part you harvested will disappear. This means that you can tell if a mushroom is harvested or not depending if the cap is still on it.

Battlehorn Castle - You'll have to purchase it now, but when it first came out you could've gotten this Official Oblivion mod for free. Adds a castle somewhere around Chorrol which you can use as a warrior's headquarters.

Deadly Reflex - A bit glitchy, but it makes Oblivion a gorefest if you get it. Decapitations, mounted combat, and body explosions are included.

GFX Initial Glow - If you hate the stupid glow on items and spells then this is for you. Instead, the weapon's enchantment color will flash once and fade off, hence the name.

There are many more mods I can show you, but I can't think of it right now. PM me if you need some help, LtCliff. I'm pretty handy with Oblivion.

Whoa thats one heck of a list! Although it all looks great im only looking for stuff like the harvest mod though. Later in the game ill almost certainly get some of the listed but for now i will stick with the good old immersion and atmosphere stuff.
